Ingredients

  • 300g of diced pork.
  • 2 garlic cloves.

  • 2 medium tomatoes.
  • Olive oil.
  • Water.
  • Some flour.
  • 3-4 potatoes.
  • Salt
  • Thyme.
  • Saffron.

Preparation

First, we will pass the pieces of meat For a little flour, just a little and shake very well with your hands to remove all the excess. In an express pot, we will put a little oil and fry it. This step is called sealing the meat. When it is golden, we will remove it and reserve it for later.

Then we will do a refried with vegetables. To do this, we will peel, wash and cut all the ingredients. The size does not matter since we will beat it later, but if you want to leave them whole, you just have to cut them finer and smaller.

Then, in the same express pot where we have fried the previous meat, we will put a good base of olive oil and we will add the garlic and onion. When it is changing its color a little (golden brown), we will add the pepper, and then the tomatoes. We will let cook for a few 60 -70 minutes so that the water is consumed a little.

As I have told you before, you can beat it or not. There is no difference, if you beat it, put it back in the pot, and if not, you leave it that way. Regardless if you beat or not, now it is the turn of add the meat. We will also add salt, saffron, thyme, water to cover the meat and a splash of white wine. We will close the pressure cooker and when the sound of the valve begins we will calculate 15 min.

While that time passes, we are peeling and washing the potatoes. The cut of the potato has to be irregular, and while cutting we raise the knife a little to hear a click. This is done so that a thicker stew comes out, since the potato contains a natural 'thickener' called starch.

After that time, we will wait a little for all the air inside the pot to go away. We will proceed to open it and add the potatoes and a little more water (if you see it a little dry). We will close again, and this time we will cook for about 5-8 min after hearing the valve whistle.
