Do you like spiced oils like I do? It is not a product that I usually have at home, but from time to time I love to brighten up my dishes with them. A simple mashed potato and broccoli like the one I'm proposing today changes completely with, for example, a splash of boletus oil.
Do not worry if you do not have this oil. You can use a quality extra virgin olive oil or add a few finely chopped and sautéed mushrooms. Here the important thing is the puree that has a significant amount of vegetables as you will have time to check.
Onion, celery, leek, carrot, potato, broccoli... vegetable purees They allow us to take advantage of all the vegetables that we have in the fridge and become a simple alternative as a first course at lunch or dinner. If you add some mushrooms and some croutons you can even serve it as the only dish of a light dinner. What are you waiting for to populate it?
The recipe
- 1 tablespoon olive oil
- ½ onion
- 1 celery branch
- 2 leeks
- Carrots 2
- 2-3 potatoes
- 1 small broccoli
- Salt and pepper
- boletus oil
- 1 slice of toasted bread
- In a saucepan, add the olive oil and lightly fry the onion, the celery, the leek and the carrot cut into chunks.
- Then add the chopped potato. and the broccoli florets and cook for a couple of minutes stirring constantly.
- We incorporate water until almost covering the vegetables and let cook for 15-20 minutes, until the potato is tender.
- Now, grind and season to taste.
- We serve the mashed potatoes and broccoli with a splash of boletus oil and a slice of toast.
