The almond marquesas are a delicious Christmas sweet traditional from La Mancha lands. Christmas marquesas are small, very juicy and tender cakes with a special almond flavor. They are typical Christmas sweets, the perfect companion for a coffee in the afternoon after a family meal. In addition, these sweets are very easy to prepare, a great idea for these days of so much work in the kitchen.

The only complication of this recipe is finding the square molds, since the original marquesas have a square shape and compact. If you can't find them, don't worry, you can use cupcake pods and a brownie pan. Although if they are rounded, it is not a problem since the important thing is the delicious flavor of these marquesas.

Ingredients
  • 250 gr of ground almonds
  • 4 eggs
  • 40 gr of wheat flour
  • 40 gr of corn flour (cornstarch)
  • 120 g sugar
  • 120 g of icing sugar
  • 1 teaspoon of baking powder
  • the zest of a lemon

Preparation
  1. We preheat the oven to 180º while we are preparing the marquise dough.
  2. In a large bowl, add the ground almonds, the icing sugar and the lemon zest.
  3. Mix gently, with enveloping movements.
  4. We are adding the eggs one by one, making sure that it is well incorporated before adding the next.
  5. Now, we mix the flour, the cornstarch and the yeast and add it to the mixture by sifting through a strainer.
  6. We mix all the ingredients well, once they are well incorporated, a thick dough will remain.
  7. We prepare the capsules on the oven tray.
  8. Next, we distribute the mixture over the capsules without it reaching the edge.
  9. We put the tray in the oven and bake the marquesas for about 12 or 14 minutes.
  10. Once ready, take out and sprinkle icing sugar before unmolding.
  11. To finish, we let cool on a rack.
