In my house a very special and rich dish is usually made that I personally love. It is a seafood fideua, or what is the same, typical noodles from fideua accompanied with marine products: clams, prawns, mussels, cuttlefish, fish, etc.
The fideua is more commonly made with meat, like ribs or lean, but I honestly prefer it that way. Its flavor is delicious and it is an ideal dish to make when we have a visitor or the whole family comes to see us. It can be made in a normal pot, but if you have a clay pot, much better. Richer will come out!
- 450 grams of special noodles for fideua
- 200 grams of peeled prawns
- 250 grams of clams
- 200 grams of mussels
- 3 cloves of garlic
- 1 cebolla
- 4 tablespoons of tomato sauce
- 1 fish stock cube
- 1 liter of water
- 1 tablespoon of sweet paprika
- Olive oil
- Sal Island
- In a liter of water, we will put the prawn shells that we have previously peeled and a pill of fish soup. We will put it to heat, and once it has boiled, we strain everything. This will be our broth for the fideua.
- In another we will fry the onion together with the 3 garlic cloves, all cut into very thin strips. When everything is stir fried, we will add the 4 tablespoons of fried tomato along with the prawns previously peeled, the clams and mussels. We will leave all this over medium heat for 5 minutes. We will be stirring every little to prevent it from sticking and becoming too much.
- The next step will be to pour the broth that we will strain previously into the pot, and leave mix the flavors for another 5 minutes over low heat.
- Then add the fideua noodles and we will put the pot over medium heat for about 10 or 15 minutes, the time that ends in being done. We will test the hardness of the noodles.
- We add the salt and the sweet paprika (about a tablespoon). In case the noodles run out of broth, add a little water and again taste the salt.
- We set aside when the noodles have the desired hardness.
