Today I bring you a recipe for manchego mantecados, typical Christmas sweet. It is a real delight, a thin and flaky dough that melts in your mouth.

A homemade sweet as they used to be done in the houses around this time and that you cannot miss, it is worth it and it will surely please everyone.

Ingredients
  • 700 gr. Of flour
  • 400 gr. lard
  • 4 eggs
  • 4 tablespoons of sugar + to coat them
  • 1 tablespoon of lemon juice
  • 1 sachet of backing powder
  • Cinnamon

Preparation
  1. In a bowl we put the flour mixed with the yeast we set aside about 3-4 tablespoons.
  2. We make a hole in the center of the flour, put the lard, which must be soft, out of the fridge a couple of hours before, the sugar, the lemon juice and the previously beaten eggs.
  3. We knead everything for about 10 minutes until everything is well integrated and a firm and smooth dough is left.
  4. We form a ball, wrap it in plastic wrap, leave it in the fridge for 1 hour.
  5. After this time we take it out and stretch it with a roller until it is 1 cm. thick.
  6. We will cut the mantecados with molds or pasta cutters, with the shapes that we like the most. On these dates we can make them with shapes of trees, hearts….
  7. We will put them on a baking tray lined with baking paper.
  8. We will bake them with the oven preheated to 150ºC for about 30 minutes or until golden brown (they should not brown much, the oven must be very soft so that they do not remain hard).
  9. When they are, we will remove them from the oven and before they cool, we will coat them in sugar
  10. and cinnamon, they must be hot so that the sugar sticks well.
  11. And ready to eat !!!
