Ingredients
  • 180 g. macaroni
  • ¼ onion chopped
  • 1 small aubergine, diced
  • 100 g. minced meat
  • 3 tablespoons of tomato sauce
  • 1 sprig of rosemary
  • 2 diced dried tomatoes
  • Grated cheese
  • Virgin olive oil
  • Sal Island
  • Pepper

Preparation
  1. In a pan we put two tablespoons of oil and poach the onion slightly.
  2. Add the aubergine cut into small cubes and cook for a few minutes until the eggplant begins to soften.
  3. Entonces add the minced meat, the dried tomato and the sprig of rosemary and stir until the meat acquires color.
  4. At that time we incorporate the fried tomato, we flavor and stir so that all the ingredients are integrated.
  5. Meanwhile, we cook the macaroni in plenty of salty water, following the manufacturer's instructions.
  6. We drain the pasta, mix with all the ingredients from the pan and serve with a little grated cheese.
