It is a somewhat laborious recipe, but very simple to follow. You can make a good meatball casserole in advance and reserve it until it's time to serve it with the macaroni or spaghetti. It is preferable not to abuse the sauce, but it is irresistible to spread the bread in it.

Ingredients
  • 320 g. macaroni
For the meatballs
  • 500 g. mince
  • ¼ onion, minced
  • 1 garlic clove, minced
  • A slice of bread soaked in milk
  • 1 egg
  • 1 tablespoon chopped parsley
  • Flour (XNUMXg)
  • Olive oil
For the sauce
  • 100 g. peeled almonds
  • A slice of stale bread
  • 2 cloves of garlic
  • ¾ liter of chicken broth
  • A pinch of saffron
  • Sal Island
  • Pepper

Preparation
  1. We prepare the meatballs mixing with the minced meat, the rest of the ingredients. We keep the dough in a film and put it in the fridge for 20 minutes.
  2. We take the dough out of the fridge and with our hands we shape the meatballs.
  3. We pass the meatballs for flour and the we fry in abundant oil hot in a low saucepan (which we will also use later). We reserve on an absorbent paper after frying them.
  4. To prepare the sauce, we heat a little oil in a pan (enough so that the bottom is covered) and we roast the almonds, the peeled garlic and the sliced ​​bread in cubes. Afterwards, we crush or mash everything with a cup of broth.
  5. Pour the mixture into a saucepan, the rest of the broth and saffron. Add salt and pepper and bring to a boil over low-medium heat. Add the meatballs and cook until the sauce thickens.
  6. Meanwhile, we cook the pasta in plenty of salty water.
  7. We serve the macaroni with a serving of meatballs and a little sauce.
