During this last month the garden has sent home when designing the weekly menu. This last week, zucchini has been the protagonist of many dishes both at lunch and at dinner. And these macaroni with green pepper and zucchini they were one of them.
The macaroons are so easy and fast to prepare that seldom is lazy to cook them. And while they cook we have 10 minutes to prepare the accompaniment. In this case, an onion, pepper and zucchini fry, which is what will mark the flavor of our dish. Try them and if you like them try this other combination with zucchini and prawns.
- 4 handfuls of macaroni
- 1 // 2 red onion
- 1 green pepper
- ½ large zucchini
- Extra virgin olive oil
- Sal Island
- Black pepper
- We chop the onion and the green pepper and dice the zucchini.
- We place a jet of oil in a frying pan and poach the onion over medium heat for 8 minutes.
- We incorporate the pepper and fry for 5 more minutes.
- Meanwhile, we put the macaroni to cook in plenty of salted water for the time stipulated by the manufacturer.
- We add the zucchini dice into the skillet and cook until tender, about 8-10 minutes.
- When the pasta is ready, we drain it and add to the pan.
- Add a pinch of black pepper, mix well and serve the macaroni with green pepper and zucchini.
