Ingredients
- 600 grams loin in fillets
- 1 cebolla
- 50 grams raw almonds
- 1 glass of broth
- 1 glass of cream to cook 200ml.

Preparation
- To prepare the loin with almond sauce, we will start by peeling and cutting the onion into small pieces.
- Put a frying pan with a tablespoon of olive oil, add the almonds, let them brown over medium heat so they don't burn. When they are, we take them out, chop them and put them in a robot, we grind them. We can leave them in small pieces or powder.
- In the same frying pan we will brown the pieces of peppered loin, take them out and reserve.
- Add the chopped onion and let it poach.
- Add the broth and cream to cook, let everything cook a little, about 5 minutes over medium heat.
- Add the ground almonds to the sauce, let it cook and form the sauce, if it is thick you can add a little broth or water.
- If you want the finest sauce, we will grind it.
- Once ready, add the pieces of loin, let everything cook together, taste salt and rectify.
