LOIN TAPE WITH APPLE COMPOTE

INGREDIENTS:

 - Pork loin tape in one piece (you calculate the weight depending on the amount you eat each and the number of people, more or less calculate 250 gr. Per person)
- Coarse salt for cooking (the number of packages is depending on the size of the piece of tape, since we will use it to cover it)
- Red apples (calculate 2-3, depending on the size, per pair)
- A little bit of water

APPLESAUCE
     - We peel the apples, chop them and put them in a cauldron
     - We put it over medium heat
     - When the fire is hot we lower it to a simmer
     - We add a little water (amount of water: like two fingers of water in a glass of nocilla)
     - It is about leaving the apples to simmer for about 30 minutes, letting them fall apart. The apple will release its juice, if you see that it sticks or something you add another little water, but normally this does not happen.
     - You can help yourself with a fork to flake the apple pieces if you want it to be done faster

LOIN TAPE
     - We oil a tray from the oven and put the loin tape on top in one piece (we do not fillet)
     - We cover the piece of loin tape with the coarse salt. We put it on top and on the sides until we stop seeing all the back tape (it stays like a mountain of snow 01.gif)
     - We put it in the oven at 180º (already preheated) for about 1 hour.
     - At the hour, we take it out of the oven and remove the layer (which will already be a crust) of salt.
     - We fillet the tape with the thickness that we want and we cover it (we pour it on top) with the apple sauce (compote).

     And that's it, the recipe is super easy. And do not be fooled by the look of the recipe (when reading it I say) because it is delicious. The applesauce is super soft and you don't need to add anything, just the apple.
