INGREDIENTS:
- 1/4 of orange squash with green skin
- 1 large scallion
- skim milk required
- a bit of butter
- salt and pepper
PREPARATION:
With 1/4 (a small piece the size of the hand) of pumpkin soup for two people.
Boil the green zucchini until soft and reserve (you can boil it the day before).
Brown a green onion, cut small, in butter, without burning. When they are golden brown, add the squash without the shell, put milk on it and process with the blender without burning, and add milk and process until the cream remains. If more milk is needed later so that it is not so consistent, add more, and heat well. Then it is seasoned with salt and pepper and that's it. It is very easy and fast.
