Lettuce stuffed with rice with mushrooms
Every time a new year begins, we all get to lose those extra pounds that we take at Christmas. Therefore, today I wanted to prepare a very healthy and healthy recipe, based on lettuce, a different way of eating it.
La lettuce seems to be a not very versatile food in which we only dare to make it in salads. However, we can do many things with it, such as filling its sheets with varied and healthy foods.
Ingredients
- Lettuce leaves.
- Water.
- Long rice.
- 1/2 onion.
- 1 small can of mushrooms.
- Olive oil.
- Salt
Preparation
First of all, we will do the rice. To do this, we will chop the onion very well and poach it in a small saucepan. When it is golden, we will add the rice and stir a little. Then, we will add salt, parsley and thyme, and then add twice as much water as rice. We will cook for 20-25 minutes over medium heat. Check that the grains are soft.
When we let the rice cook, we will prepare the lettuce. We will cut the stem and carefully remove the leaves so that they do not break. In addition, in a large pot we will boil water, to be able to cook these leaves in it, in a time of 2 minutes. Later, we will remove them carefully and let them drain and then dry them with absorbent paper.
While everything is going on, we will go biting the mushrooms. In a frying pan, we will sauté them with a little oil, and then we will add the rice. When all the flavors have been mixed we will remove it from the heat.
Finally, we will fill each lettuce leaf with this filling of rice with mushrooms. If you don't want it to be so loose, you can make it as a kind of light béchamel so that the rice is more compact. In addition, we will add a little cheese on top and grill for 3-4 minutes.
