Lentil stew with chorizo. September arrives and we start with the routine, now it's time for some spoon dishes that are quite appetizing, although I also make them in summer, but I prepare them lighter, since they do not appeal to such strong dishes.

It is a very complete dish and even if it has a little sausage, which gives it a very good flavor. I only put a few small pieces to add flavor, but it remains a complete and healthy dish. Legumes provide very good nutrients. But if you want them lighter, you just have to do without the chorizo. It only remains to accompany this dish with a salad and we will have a great meal.

Ingredients
  • 400 gr. lentils
  • ½ onion
  • 2 tablespoons of tomato sauce
  • A piece of green pepper
  • 1 hoja de laurel
  • 1-2 carrots
  • 1-2 sausages
  • Salt and oil

Preparation
  1. We clean the lentils, I put them in a colander and wash them under the tap, let them drain.
  2. In a saucepan I put a little oil, add the fried tomato, the piece of pepper, the onion and the bay leaf.
  3. We clean the carrot and chop it. Also the chorizo, we cut it into pieces and add it all to the casserole.
  4. We add the lentils.
  5. We cover them with enough water, we put it over high heat until it starts to boil and then we lower the medium heat, which is making chup-chup.
  6. It will depend on the lentil that we use but it will be approximately one hour, I will add the salt after 30 minutes and if you like it you can add some potatoes in pieces, if necessary, water is added.
  7. We will let them finish, until they are tender and the broth is thick. This will be to our liking.
  8. It is a delicious and simple dish.
