Baking cookies is always a good activity this time of year. When they are also simple and do not involve any difficulty, preparing them becomes child's play. This is the case with these lemon and raspberry cookies, perfect bites to accompany tea or coffee at snack time.
If you are looking for some cookies to make as a family during the weekend, you have found them. If you do not like raspberry jam or it is not easy for you to find it, you can replace it with another. You can even fill them with different flavors to make everyone happy. Do you dare to do it?
- 1 and ½ cup of almond flour
- ¼ teaspoon baking soda
- ¼ cup butter, melted
- 1 teaspoon vanilla essence
- 3 tablespoons honey
- 1 tablespoon lemon zest
- 1 tablespoon of lemon juice
- ¼ cup raspberry jam
- We preheat the oven to 180ºC.
- In a recipient we mix the flour of almonds and baking soda.
- We add the butter, the essence of vanilla, honey and lemon and mix until a wet dough forms.
- With every tablespoon of dough we form a ball and we place it on a baking sheet lined with greaseproof paper. We press its center with our thumb to form that characteristic hole and lightly crush the cookie.
- We fill in the gaps with the jam.
- Bake for 15 minutes or until golden around the edges. Be careful that they do not burn.
