Ingredients
  • 1 shortcrust pastry
  • 5 eggs + 1 to paint the dough
  • 150 gr. sugar
  • 150 gr. note to mount
  • The juice and zest of two lemons
  • Icing sugar to decorate
  • Lemon zest
  • To accompany:

  • Berries

Preparation
  1. First we will turn on the oven to 180ºC, we will grease a mold, if it is removable better, and we will place the dough in the mold, leaving it well attached to the mold, cutting off what is left over from the edges.
  2. Prick the dough with a fork and cover the bottom with baking paper, put some chickpeas making weight, put in the oven for 10 minutes, so that the dough is made a little, remove it, remove the chickpeas and the paper, we will paint the base with the beaten egg and we will introduce it to the oven for 5 more minutes, thus we will seal the base and the base will not soften with the lemon cream.
  3. We prepare the lemon cream filling. We beat together the eggs and the sugar, followed by the juice, the lemon zest and the cream, we mix everything well.
  4. We put the filling into the dough and put it in the oven, we lower the temperature to 150ºC and we will have it for about 30 minutes or until it is curdled.
  5. When it is, we take it out of the oven, we will let it cool. At the time of serving, we will cover it with icing sugar and lemon zest.
  6. It can also be accompanied by some red fruits or jam.
