Lemon Madeleines

The madeleine It is a small, shell-shaped sponge cake whose origin seems to be in the Lorraine region, northeast of France. It may seem a priori that it could have an elaboration similar to that of the classic muffins, but it is not like that, there are small nuances that differentiate them.

Madeleines cannot be improvised; its dough requires a certain cold rest before being baked. Besides this, there is another important difference with respect to the classic muffins; here the butter is usually melted and incorporated at the end of the process. Leaving its elaboration aside, the result is fantastic. Are very tender cakes and with an ideal size to serve as breakfast or snack.

Ingredients
  • 113 g. of butter,
  • 3 XL eggs at room temperature
  • Zest of a lemon
  • 1 teaspoon liquid vanilla
  • 130 g. of sugar
  • 130 g. wheat flour
  • ½ teaspoon baking powder
  • Pinch of salt
  • Icing sugar (optional)

Preparation
  1. We melt in a saucepan the butter and reserve it warm.
  2. We beat the eggs with the sugar at high speed until they turn white and we get a fluffy mixture.
  3. We add the vanilla and lemon zest and beat at high speed until both ingredients are integrated.
  4. We gradually incorporate the sifted flour with yeast. Mix at very low speed or with a spatula making enveloping movements so that the dough does not fall.
  5. Finally, we add in a thread the warm melted butter and we integrate it with the spatula in the same way.
  6. We cover the dough and put it in the fridge 2 hours (they can be more).
  7. After time, we preheat the oven to 190 degrees.
  8. We put the mold to refrigerate 10 minutes and then it grease and flour slightly.
  9. We fill the cavities out of the mold with the dough up to ¾ of its capacity and bake the madeleines between 8 and 10 minutes, until we see that they are lightly browned.
  10. We unmold and leave cool on a wire rack and before serving we sprinkle with icing sugar
