Candied lemon

Candied lemon is very common in North African and Indian cuisine. The production process is simple, the lemons are placed in a closed jar with water and salt and left at room temperature for approximately a month.

Canned lemons are one of the main ingredients in tajines and other Moroccan preparations. In Cambodian cuisine we can find ngam nguv, a chicken soup to which whole canned lemons are added. Whether we use them whole, in strips or very minced, they will give a touch of freshness to our preparations.

Ingredients

  • 2 lemons
  • Water
  • 7 teaspoons of salt

** For each lemon there are three tablespoons of salt + one extra that is added to the pot. To make more lemons you simply have to add three tablespoons of salt for each lemon.

Crafting

With a knife we ​​are going to make two cuts to each lemon, as if we wanted to cut them into quarters, but without cutting completely because we do not need to separate the pieces. Open the lemon a little and put two small tablespoons of salt inside. Put it in the pot and add one more tablespoon of salt. Repeat the process with the other lemon.

When you have both lemons in the jar add one more tablespoon of salt and cover them completely with water. It is important that they are completely covered for this reason, if you see that they do not submerge completely, add a piece of lemon or stick a toothpick in them so that when you close the bottle it pushes them down. Finally, close the bottle and voila, in a month you can consume them.

Notes

  • The can should be kept at room temperature. Once we have the confit lemon, we remove the water from them and store them in the fridge, inside another closed jar or a tupperware.
  • The preparation time is approximate, it took me more than a month in the middle of winter. To know if they are ready, we simply open the jar and look at them, the appearance should be like the one you see in the photo. If they still have left, we close the boat and wait again, you can look at them again every week until they are done.
