Today we are going to prepare one of those stews that we like so much: Lentils with potatoes and dried tomatoes. A simple stew in terms of ingredients but with a lot of personality thanks to the flavor provided by the dried tomatoes in oil, a great addition to many stews!
At home we prepare legumes every week and generally we take the opportunity to accompany them with those vegetables or ingredients that we must release soon. However, just one Sauteed onion, leek and pepper, as in this case to make tasty lentils with potatoes and dried tomatoes.
Cook the sauce calmly, until the onion is well poached. That will give a lot of flavor to the stew that you can later enrich with hot, either vegetables or of chicken, as I have done in this case. Also, some spices never hurt: paprika and turmeric, in this case, our favorites.
The recipe
- 1 chopped onion
- 2 leeks, minced
- 1 green bell pepper, minced
- ½ red bell pepper, chopped
- 3 potatoes, peeled and cubed
- 5 sundried tomatoes, chopped
- 1 tablespoon tomato paste
- 1 teaspoon of paprika from La Vera
- A pinch of turmeric
- Salt and pepper to taste
- 250 g. lentils
- Chicken soup
- Olive oil
- Heat 3-4 tablespoons of olive oil in a saucepan and sauté the onion, the leek and the pepper over medium heat for 10 minutes.
- Later, we incorporate the potato, the dried tomatoes, the concentrated tomato, the spices and mix.
- Then we add the lentils and generously top with chicken broth.
- We cook approximately 25 minutes or until the lentils are done.
- We serve the lentils with potatoes and hot dried tomatoes.
