The lamb in my house is synonymous with party, something to celebrate. It is served on rare occasions, usually roasted in the oven in a traditional way, although there are exceptions. These Lamb Chops with mint and apple sauce were one of them. Do you dare to try them?

Ingredients
For the sauce
- ½ cup mint leaves
- 2 parsley sprigs
- 1 Granny Smith apple, peeled and cored
- ⅓ cup olive oil
- 1 tablespoon of lemon juice
For the chops
- 1 leg of lamb chops
- ¼ cup olive oil
- 3 dientes de ajo chopped
- 2 teaspoons minced fresh rosemary
- Sal Island
- Black pepper
Preparation
- To make the sauce we put all the ingredients in a food processor. We blend until the sauce is smooth. We keep in a glass jar and reserve in the fridge.
- In a fountain add the olive oil, garlic and rosemary. We mix.
- Add the chops, spread them well on both sides with the mixture and leave marinate 30 minutes.
- On a grill over medium-high heat we grill the chops, 3 minutes on each side until toasted.
- We serve with the sauce mint and apple.
