What is more typical of summer, than an ice cream? We can enjoy an ice cream at any time of the year, but in summer these take on greater prominence. Ingredients
For the blueberry syrup
  • 340g. fresh or frozen blueberries
  • 1 tablespoon of balsamic vinegar
  • 58 g. white sugar
For the blueberry ice cream
  • Yolks 3
  • 250 +120 ml. whole milk
  • A pinch of salt
  • 172 g. white sugar
  • 110 g. goat cheese at room temperature
  • 2 tablespoons lemon juice
  • 370 ml. cream (35% mg)

Preparation
  1. With a oven safe container we mix the blueberries, the sugar and the balsamic vinegar. Bake for 30 minutes at 200 ºC or until the blueberries are soft and juice has formed.
  2. In a bowl, beat the yolks of egg and we reserve.
  3. In a saucepan over medium heat, we mix 250 ml. milk, salt and remaining sugar until milk boils. So, we remove from the fire.
  4. We pour half of the mixture into the bowl with the yolks, stirring with rods constantly so they don't curdle.
  5. We pour this mixture into the saucepan that contains the remaining mixture and we take it to the fire again (low-medium heat), stirring constantly until mixture thickens. So, we remove from the heat and pour into a large bowl. It we mix with the cheese of goat, the remaining milk (120ml.) and the lemon juice, until they are completely integrated.
  6. With a food processor We mash the blueberries until the mixture is smooth. Add the mixture from the bowl and work again until a homogeneous mixture is achieved.
  7. We carry the mix to the fridge and we follow the manufacturer's instructions. Once done, we store it in an airtight container in the freezer.
  8. We remove from the freezer 5-10 minutes before serving.
