We take the potatoes once they are peeled, we cut them into small squares or with an emptying spoon we take out potato balls. Sauté the potato balls with a little oil, or a pinch of butter, in a frying pan until they are golden brown and take color (about 2 minutes). We have made the potatoes crispy on the outside. So that they are also made inside, we put them in the oven for 15 minutes. And as a result we have crispy potatoes, very tender, and without an extra drop of oil !!
