Ingredients
  • 250 grams of wheat flour
  • 75 ml. White wine
  • 400 ml. virgin olive oil or sunflower oil
  • Skin of 1 lemon
  • 1 tablespoon of Matalahúva seeds
  • Sal Island
  • 200 gr. Lamb
  • Water

Preparation
  1. In a frying pan, we heat the 400 ml of oil. When it is hot, add the lemon peel and the tablespoon of Matalahúva seeds. Let them cook for 2-3 minutes and remove from heat.
  2. In a bowl we add the flour, the wine, and 75 ml. of the oil that we have flavored with the lemon and the Matalahúva. To this mixture we also add the fried Matalahúva seeds. We stir with a spoon and pour on the kitchen counter. We work the dough until we have a ball that does not stick to our hands. We will let the dough rest covered with a cloth for 30 minutes.
  3. With the help of a roller we stretch the dough well until it is as thin as possible and we cut squares of about 5 or 6 centimeters. It is important that the dough is spread very thin, because when frying it makes it a little fat.
  4. We fold the opposite corners of each portion on themselves, gluing them with a few drops of water and press to prevent them from coming off when frying.
  5. We heat the pan over medium heat with the oil that we have flavored and add them to the pan. When they are golden, we remove the pestiños to an absorbent paper to remove the excess oil.
  6. Then in a container We pour 200 grams of honey with half a glass of water approximately, and heat it ... We stir well with a spoon and when we have a fairly diluted honey, we go putting the pestiños one by one to sweeten them… It consists of putting them in, leaving for two or three seconds to soak well in honey and taking them out on a separate tray. And ready!

Notes
If you don't like honey, you can always sweeten them with a mixture of sugar and cinnamon.
