Homemade vegetable soup

This recipe for vegetable soup is very simple and quick to make, what entertains us the most is cutting all the vegetables, although now there are many utensils that make this step easier and faster.

In this recipe there seem to be a lot of vegetables but when cooked they are reduced. The quantities can be varied according to the taste of each house and put the ones you like the most.

Ingredients

Preparation
  1. To prepare the homemade vegetable soup, we will first wash all the vegetables. We will cut the cabbage into strips, the onion and the carrot in julienne strips. We wash the leeks, cut in half and then into small pieces.
  2. We will wash the chard well and cut it into pieces.
  3. The broccoli we will remove the bouquets and we will chop them.
  4. We put a casserole on the fire 2-3 tablespoons of oil, add the onion, the leek and the cabbage. We stir and let it cook for 5 minutes.
  5. After this time we add enough water, 1-2 liters of water, depending on the vegetables that we are going to put.
  6. Once the water starts to boil, add the green beans, let them cook for 5 minutes and then add the rest of the vegetables. Add a little salt, a little pepper and the stock cube. We let cook until the vegetables are tender.
  7. We taste salt and rectify if necessary.
