Homemade tomato sauce
Last week I told you about some of the benefits that tomatoes have for our health and today we are going to see some recipes with which we can take advantage of these benefits, all very simple, inexpensive and delicious! I start with one that can never be missing in our kitchen: The homemade tomato sauce.
I usually do it when I have a lot of tomatoes, either because I have seen them at a good price and I take advantage of the offer or because some relative who owns a garden has brought me their harvest. If I left them as is, they would end up getting bad because we don't eat so many tomatoes at once, but we can take advantage of them by making a homemade sauce that we can then keep for 6 months or even a year, depending on the packaging that we give it.

Ingredients*:
- 1 kg of Tomatoes
- 1 cebolla
- Olive oil
- Sal Island
- Pepper
* The amount of ingredients may vary depending on how much sauce we want to prepare, it will not be the same if it is for a single use than if we want to fill one or more jars and keep them. The amounts that I put give to fill several medium-sized jars (those of jam, for example).
Preparation:
We wash the tomatoes well and grate them, keeping it in a container. In a pan we add a little olive oil and while it is heating over low heat we chop the onion, then we add it to the pan and continue cooking over low heat. When the onion is transparent add the grated tomato, salt to taste and pepper. Cook for a few minutes and that's it.
If we want to keep it, we will use glass jars, in my case I use several jams that I had saved for this. We wash them well and sterilize them by immersing them in water, which we will boil for 20-30 minutes (along with the lids). Then we let them dry, in that time the sauce will have cooled down and we can put it in the pot.
We close the lid tightly and place the jars upside down, leaving them like that for a few hours or, much better, overnight. In this way they will keep up to 6 months if you keep them in a cool and dry place.
Recipe suggestions:
I do it in the simplest way because then I am not limited when it comes to using it, for example, if I feel like I can brown some garlic first or make a sauce with peppers and then add the sauce, but if you prefer you can make it right from the start with more ingredients like garlic, carrots, peppers, etc. Everything will depend on your tastes.

Do you want a recipe that is ready in less than 3 minutes ?: Open a jar of your homemade tomato sauce, heat it in the pan and add one egg per person. Cover until set to taste. You already have some eggs set in tomato, totally homemade and very fast.
Another one: Boil pasta (quantity to taste), which usually takes 10 minutes to be and cook until pasta is. Open a jar of your sauce and put it to heat in a saucepan, add two cans of tuna. When the pasta is ready, mix it with the sauce. That easy.
