Homemade quince

Ingredients
  • 1 kilo of quince (cut and clean)
  • 750 grams of sugars

Preparation
  1. We wash and clean the skin of the quinces very well, I did it with a brush, to remove the hair on the skin.
  2. Once clean we will chop it up and remove the center, the skin will not be removed, we will weigh it in this recipe I have put 1 kilo already clean.
  3. We will put it in a pot or casserole and add the sugar.
  4. We will let it rest covered with a fine cloth, for about twelve hours. After this time we will move it well, so that it is well mixed.
  5. It releases its juice and mixes with the sugar. Now, we will put it on the fire not very high and we will leave it until it is very soft. I had it for 1 hour, we will stir it so that it does not stick, if you see that it stays dry, add a little water.
  6. It has to be a more tan and soft tone, then it will be ready.
  7. When it is ready we will crush it.
  8. We let it warm a little and we will put it in small molds or in a large one.
  9. We will put it in the fridge until it cools down.
  10. You can keep it in the fridge for several months in tightly closed tappers, the quince holds up very well-
  11. If you make more quantity you can freeze it.
