Homemade Pizzas with French Fries and Fried Eggs

There is nothing more traditional in Spain than good fried potatoes with egg. For this reason, we have taken this lunch base to incorporate them into a recipe, also traditional, such as Italian pizzas. You have to find new flavors and ingredients for the famous pizzas.

The pizzas can be incorporate any ingredient, since it is very versatile in its preparation. That is why we have played with the traditional and introduce it into a banguardian cuisine like today's pizzas, without losing its flavor and traditionality.


  • 2-3 medium potatoes.
  • 2 fried eggs.
  • 2 garlic cloves.
  • 1 onion.
  • 4-5 ripe tomatoes.
  • 1/2 green pepper.

For the mass:

  • 1/4 of glass of lukewarm water.
  • 1/4 of glass of milk.
  • 250 g of flour.
  • 20 g of pressed yeast.
  • Salt


First, we will do the Pizza mass. To do this, we will put the crumbled yeast in a bowl, we will add the milk, salt and water little by little. We will knead it well with our hands until we get a homogeneous elastic and moist dough. We will leave to ferment for 1 hour covered with a damp cloth.

On the other hand, while the dough ferments, we will make the natural tomato sauce. To do this, we will cut all the vegetables into medium cubes and poach them in a pan with a good base of olive oil. Let cook over medium heat for about 15 minutes, so that the tomato has reduced and all the water has evaporated. We'll run it through the mixer.

At the same time that the sauce is being made and the dough is resting, we will go cutting the potatoes and frying them, in addition to the fried eggs. We will cut the potatoes into thick sticks, add salt and fry them in a deep fryer with very high heat until golden brown. In a smaller pan, we will put two fingers of olive oil over medium heat and fry the eggs without the yolk setting. We will drain and reserve them.

Once the dough has fermented, we will stretch it on a smooth surface, place it on a baking tray and place it in the preheated oven at 180º C for about 5 minutes. After this time, we will take it out and place on top of it a natural tomato base, a bed of fried potatoes and the two fried eggs.

Finally, we will add a lot of grated semi-cured cheese and we will put it back in the oven to gratinate it about 5-8 more minutes. Ready to eat!.
