Homemade cupcakes with pine nuts

Homemade muffins with pine nuts, ideal for breakfast or a snack. There is no better way than to bake some delicious, rich and juicy muffins just out of the oven.

A traditional cupcake recipe that everyone is sure to like. But they are ideal for children, a good snack since we put an olive or sunflower oil and accompany with some nuts, I have put pine nuts but you can put the one you like the most, or without them.

They are worth trying, they are rich, tender and juicy !!!

Ingredients
  • For 12 muffins:
  • 200 gr. Of flour
  • 125 ml. mild olive or sunflower oil
  • 150 ml. milk
  • 2 eggs
  • 110 gr. sugar
  • ½ sachet of yeast
  • Lemon zest
  • Pinions

Preparation
  1. We take a bowl and put the eggs and the sugar, beat with a whisk until a whitish cream is left and the sugar is well dissolved, it can be done with the electric rods.
  2. Add the milk little by little, beat.
  3. Then we add the oil, beat.
  4. Grate the skin of half a lemon and add it to the dough.
  5. We sift the flour together with the yeast and we add it little by little to the dough, we beat everything until everything is incorporated and there are no lumps of flour.
  6. Cover the dough with a little film and let it rest for about 30 minutes in the fridge.
  7. We preheat the oven to 180ºC
  8. We prepare a baking tray, put the muffin sheets, pour the dough into them, filling them with the ¾ parts of the paper.
  9. We sprinkle a little sugar on top and a few pine nuts on each cupcake.
  10. We put it in the oven, we will put it in half heat up and down.
  11. We will leave them for about 20 minutes, we click in the center with a toothpick if it comes out dry they will be ready if we do not leave them until they are, I had them for 30 minutes.
  12. We remove from the oven, let it cool.
  13. When they are cold they will be ready to eat !!!!
  14. Delicious !!!
