Homemade cooked croquettes, a few days ago it was the day of the croquette.
I believe that croquettes bring memories to all of us in one way or another, croquettes are made in all houses and like those of our mothers or grandmothers who are always the best.
The croquettes is a way to take advantage of those remains of meat, fish, vegetables.… That we have some food left and cannot be thrown away.
Sometimes out of laziness since they are entertaining we do not take advantage of the food, but you have to think that if we make croquettes with it, we can freeze them and thus we will have croquettes for any occasion to accompany a meal or an aperitif.
So I encourage you to take advantage of everything and freeze.

Ingredients
  • 300-400 gr. of assorted meat from the stew
  • 25 gr. of butter
  • 3 tablespoons mild olive oil
  • 3 tablespoons flour
  • 150 ml. of stew broth
  • 250-300 ml. hot milk (the one that admits)
  • A pinch of nutmeg
  • Sal Island
  • To coat the croquettes:
  • 2 eggs
  • Bread crumbs
  • Frying oil

Preparation
  1. To make homemade croquettes, the first thing to do is to remove the meat from the stew by removing the bones and fat. We will chop it with a scissors or we will chop it with the mixer so it will remain as a dough. As you like the most.
  2. We put a frying pan with the oil and butter over medium heat, we put the very chopped onion, we will let it cook until it turns color.
  3. When the onion is colored, we add the meat. We remove everything so that everything is well integrated.
  4. Next we will put the tablespoons of flour. We have to stir well and let the flour cook a little for a couple of minutes.
  5. We add the broth little by little and stirring.
  6. We will continue preparing the mixture but with the warm or warm milk, it is made better and thus it does not make lumps, we will add little by little, stirring and adding whatever is allowed.
  7. When we are pouring the milk add a little nutmeg and a pinch of salt and we will test the dough to rectify it with salt.
  8. When we see that we have the dough as we want, we will cook it without stopping stirring for about 10 minutes so that it is well done.
  9. It has to be removed from the pan but it should not be a very soft or hard dough, if so, more milk can be added.
  10. When the dough is, we transfer it to a source, let it cool, cover with film and put it in the fridge for 3-4 hours or until we are going to prepare the croquettes.
  11. To make the croquettes, we prepare a bowl with the 2 beaten eggs and another with the breadcrumbs. We will form the croquettes and pass them first through the egg and then through the breadcrumbs.
  12. We put a frying pan on the fire, when it is hot we will begin to fry the croquettes.
  13. We take them out and put them on a plate with absorbent paper.
  14. And they will be ready to eat !!!!
