In my house, it is a tradition at this time to buy some bitter olives, as they are taken from the olive trees and season them to our liking. As you surely know, as there is a great variety of olives, there are also a large number of different dressings.
Today we want to share with you the recipe for the dressing that we make at home, and although it is surely the same or similar to the one made in many areas of Spain, we discovered it in the town of Badajoz called la Puebla de Sancho Perez. If you like olives and want to try a rich dressing, this is your recipe.
- 10 kg of olives
- 1 green pepper
- 1 red pepper
- 2 heads of garlic
- 1 large orange
- 1 large lemon
- 200 grams of salt
- Oregano
- Water
- The first thing of all will be to crush the olives so that they open and we can sweeten them. Next, we will put them in large cans with water that we will change daily for 5 days, which will be the time they will remain soaked to remove the bitterness.
- On the last day of those 5, we will rinse, pour clean water and start with the dressing of our olives.
- We will peel two heads of garlic and we will add them to the olives with a slit in the middle of each garlic, but without peeling. We will wash the two bell peppers, both red and green and we will cut them into thin strips and also add them. The next thing to do is orange and lemon well washed, which we will cut into medium-sized segments. We will also add the 200 grams of salt and oregano (approximately half a pot of the normal ones sold in supermarkets). We will cover with water, and voila!
