Strawberry oatmeal cake

One of my goals for this year, is to try and find healthy recipes. As you can imagine, one of my passions is cooking and, specifically, baking. Fortunately, today there are a wide variety of healthy products and various options to cook in a healthier way, without giving up a dessert or a sweet from time to time.

And in this quest to improve nutrition, I've stumbled upon this strawberry oatmeal cake. Although I have to say that I have modified the recipe to my tastes, since the original version is completely vegan. The result is a juicy, healthy cake perfect for an occasional snack. If you don't like strawberries too much or want to prepare this cake out of season, you can use any other fruit such as blueberries, red berries or any citrus. Without further ado we get down to the kitchen!

Ingredients
  • 200 g of oatmeal
  • 2 eggs L
  • 1 natural yogurt
  • 80 ml of milk
  • the juice of an orange
  • 1 teaspoon of baking powder
  • 1 teaspoon vanilla essence
  • 4 tablespoons brown sugar
  • 2 tablespoons stevia or sweetener to taste
  • 100 gr of strawberries

Preparation
  1. Before we begin, we preheat the oven to 180 degrees while preparing the cake batter.
  2. First we are going to mix the wet ingredients in a bowl.
  3. We put the two eggs and add the brown sugar, yogurt and milk and mix so that the sugar dissolves well.
  4. Afterwards, we add the juice of an orange, a teaspoon of vanilla essence and the stevia or the sweetener.
  5. If you want the cake to be sweeter, you can vary the amounts of both brown sugar and sweetener, or add white sugar for a sweeter result.
  6. We mix the ingredients well until we obtain a light cream.
  7. Now we are going to incorporate the dry ingredients.
  8. We will use a strainer to sift the oatmeal and thus avoid lumps.
  9. We also add the yeast and mix until obtaining a consistent dough.
  10. If it's too runny or thick, you can add more flour or more milk until you get the desired texture.
  11. We prepare a mold with greaseproof paper and add half of the mixture.
  12. We clean the strawberries well and cut them into slices.
  13. We put half of the strawberries on the cake batter and cover with the rest of the mixture.
  14. We finish by placing the rest of the strawberries on top of the cake.
  15. We bake for about 40 minutes at 180 degrees.

Notes
To know if the cake is ready, we must prick with a toothpick. If it comes out completely clean it means that it is well cooked.
