There are many recipes to cook the potato omelette, or also known as the Spanish omelette. This traditional dish from our recipe book, it has as many possibilities as there are tastes. There is no traveler who comes to Spain and does not try this delicacy. But the Spanish omelette can be a high calorie dish, so if you are on a low-fat diet, you may not be able to eat it.

That is why today I bring you this recipe for a healthy potato omelette, a fantastic alternative for this dish. The way you cook potatoes changes largely its caloric intake, but in this case it does not change the taste at all. If you try this recipe, you will surely repeat.

Ingredients
  • 4 large potatoes
  • 4 eggs L
  • Half an onion
  • Extra virgin olive oil
  • Sal Island

Preparation
  1. To start we have to peel and wash the potatoes.
  2. We dry well with absorbent paper.
  3. We cut the potatoes into thin slices and we reserve them in a container that is quite deep.
  4. Cut the onion julienne style and add to the potatoes.
  5. We add a couple of tablespoons of extra virgin olive oil and salt.
  6. We stir the potatoes well so that all of them are well impregnated with the oil.
  7. We preheat the oven to 200 degrees.
  8. We prepare a baking tray with a sheet of baking paper.
  9. We place the potatoes on the baking tray, spreading them well over the entire surface.
  10. We put the potatoes in the oven for about 40 minutes.
  11. Halfway through the time, we take out the tray and carefully remove the potatoes so that the ones that remain below are done well.
  12. The potatoes have to be tender and not browned, so we are puncturing them every so often to check if they are ready.
  13. We prepare the eggs in a separate bowl, beat them well and add salt.
  14. We remove the potatoes carefully and put them in a deep container.
  15. Add the beaten egg and mix carefully.
  16. We prepare a non-stick frying pan with a drizzle of oil and heat.
  17. We carefully add the tortilla mixture and spread well throughout the pan.
  18. Over medium heat we cook the omelette, carefully separating the edges of the pan.
  19. When we see that the edges are set, we turn it over with the help of a plate.
  20. We leave a few minutes for it to cook on the other side and we remove it on a plate.
  21. And ready! We have already prepared our delicious healthy potato omelette.

Notes
The eggs should be at room temperature, so you should remove them from the refrigerator while the potatoes are cooking in the oven.
