This week I propose some ham and cheese pancakes I accompany it with pico de gallo, a typical Mexican dish, an ideal dish for summer dinners. A simple and easy recipe to prepare.
Prepare these corn pancakes so they have more flavor to Mexico and instead of oil use butter. You can also change the filling and put chicken, beef, vegetables, you can put chorizo pieces ... and if you like something spicy it will also do very well.
These ham and cheese pancakes I accompany them with some fresh chopped vegetables, which is called pico de gallo, typical to accompany the pancakes.
- 1 package of corn cakes
- 4 slices of Gruyère cheese, cheddar ..
- 4 slices of mozzarella cheese
- 4 slices of cooked ham
- Olive oil or butter
- For the pico de gallo,
- 1 cebolla
- 2 tomates
- 1 green pepper
- 1 cucumber
- Salt and oil
- Pepper
- Lemon or lime
- To make the ham and cheese pancakes we will start with the pico de gallo.
- We cut all the vegetables, the onion, the pepper, the cucumber and the tomatoes into small pieces and we put them in a source. Season with a little salt, oil, pepper and a little lemon or lime juice. You can also put a little green chili.
- We started with the pancakes. We put a pancake, on top we will put the cooked ham, the sliced cheese and the mozzarella cheese first.
- We put a pancake on top. We put a frying pan on the fire, spread with oil or butter.
- We will put the stuffed pancake in the pan. We leave it for 2-3 minutes over medium heat so that the heat reaches inside and we turn it over to finish cooking.
- We are taking them out and before they cool, we cut them and serve in a source.
- We accompany with the pico de gallo.
