- To prepare the hake in sauce with eels, we will first prepare the hake. We will ask at the fishmonger not to prepare it the way we like it, sliced or to remove the central spine and cut the fillets into pieces.
- We chop 2 cloves of garlic into very small pieces.
- We put the flour on a plate, we salt the hake pieces and we pass them through the flour.
- We put a casserole with a little oil over medium heat, we add the garlic that is browning, in the same oil we add the hake as it is done, when it is golden on one side we turn it over.
- When we see that the garlic is a little golden, add the white wine, let the alcohol evaporate and add the fish stock.
- We will be stirring the casserole so that the sauce takes shape. We taste of salt. Let cook 5-7 minutes and turn off, add chopped parsley. We booked.
- We cut the 2 garlic into thin slices.
- We put a frying pan with oil, we add the garlic and the cayenne, before they brown we add the gulas, we sauté everything together for 3-4 minutes.
- At the time of serving, we will add the eels in the casserole with the hake or we can serve the hake and put the eels on top.
