I love salmon. I usually try every recipe that contains it and this is one of the last. The roasted salmon that we prepare today has a tender and juicy texture and is accompanied by a very special weight, of peas. A different way to accompany it, without a doubt!

Ingredients
  • 4 salmon fillets
  • 2 teaspoons whole grain mustard
  • 2 teaspoons of honey
  • 1 teaspoon of lemon juice

  • 1 garlic clove
  • 1 cup fresh basil
  • ½ cup of toasted pine nuts

Preparation
  1. We start by preparing the pesto. To do this, we heat water in a pot until it boils. Then, we incorporate the peas and cook 2-3 minutes until tender. So that they do not lose color, we remove them to a bowl with ice water.
  2. Next, we place in a food processor garlic, peas, basil, pine nuts and season. We grind until we achieve a more or less uniform mixture. So, in the form of a thread, we pour the oil with the processor running. Once the oil is integrated, we correct the point of salt, pepper or lemon if necessary. We booked.
  3. While we prepare the pesto, we preheat the oven at 220 ° C.
  4. We place the salmon fillets on the baking tray, lined with parchment paper.
  5. We mix the honey, mustard and lemon juice and brush each fillet with the resulting mixture.
  6. We roast the salmon for 8-12 minutes, or until done and your meat separates easily. Then, out of the oven, let it rest for 5 minutes.
