Ingredients
  • 3 salmon fillets
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • For the crumbs:
  • ½ cup panko breadcrumbs
  • 1 tablespoons of butter
  • 2 dientes de ajo chopped
  • For the mustard sauce:
  • ½ tablespoon of butter
  • 1 shallot, minced
  • 1 clove of minced garlic
  • 2 tablespoons minced sage
  • ¼ cup white wine
  • ¾ cup of evaporated milk
  • 1 tablespoon dijon mustard

Preparation
  1. We prepare the crumbs. In a small saucepan, melt the butter over medium-low heat. Add the minced garlic and cook for 30 seconds until golden brown. Then, we add the breadcrumbs, mix well and cook a couple more minutes to brown. We booked.
  2. We cook the salmon grilled. Salt and pepper the salmon fillets and place them on a hot grill with the skin facing up. After 3-5 minutes we turn it over to brown it on the other side. We withdraw and reserve.
  3. We prepare the sauce. We heat a frying pan and melt the butter. When it bubbles, add the shallot, garlic and sage and fry for a couple of minutes. Then we add the white wine and cook 2-3 minutes to reduce it. Finally, we add the milk and mustard and cook without stopping to stir the mixture until it thickens slightly.   4. We serve the salmon immediately, accompanied by the mustard sauce and topped with the breadcrumbs.
