The good news is that you can both cook the green beans and roast the sweet potato the night before. So, you just have to heat it, add your favorite spices and dress it with a drizzle of extra virgin olive oil.
- 1 small sweet potato
- 300 g. green beans
- Extra virgin olive oil
- Freshly ground black pepper
- Paprika
- Sal Island
- We wash the sweet potato under the water tap to remove the dirt that is stuck to the skin.
- We peel the sweet potato and we cut into slices of little more than half a centimeter.
- We place the slices in a baking dish lined with greaseproof paper and spread them lightly with a mixture of olive oil and spices.
- We bake at 200ºC for 20-25 minutes, until soft.
- Meanwhile, we clean the beans, cut the tips and cut each one into 2 or 3 pieces.
- Once prepared, the we cook in plenty of water boiling and a pinch of salt for 20 minutes or until tender.
- We combine the green beans with the roasted sweet potato, add a little pepper as well as other spices of our liking and we water with olive oil extra virgin.
