Green beans with potatoes and poached egg

The garden rules and the green beans they are now in their prime. Today we can find beans in the market throughout the year, however, we recommend eating this seasonal vegetable. Look for them in the market and see that they are smooth and that when they break they crunch.

The bean is a fresh vegetable, light and full of vitamins. It has 90% water and no fat, which is why they are ideal for slimming diets. You can steam them, as we will do today and accompany them with potato and a poached egg. Cooked this way or in scrambledEven the most averse to vegetables will dare with them.

Ingredients

For two people

  • 300 gr of green beans
  • 2 potatoes
  • 1 garlic clove
  • 2 eggs
  • Extra virgin olive oil
  • Sal Island
  • Paprika

Poached egg

Preparation:

We remove the tips and the strings of the green beans and we cut them into two or three parts. We also cut the potatoes into pieces once peeled.

We steam cook both beans and potatoes; Remember that it is important that the water in the casserole does not touch the vegetables. Once they are tender, we remove to a container and season.

We prepare the poached eggs: To do this, we place plastic wrap in a cup and spread it with extra virgin olive oil. We break the egg inside, carefully, season it and add some aromatic herb if we wish. We close the package by tying it tightly with kitchen string and place it in a pot with plenty of boiling water for 4-5 minutes.

Sauté the garlic clove with a little extra virgin olive oil and the paprika and add the sofrito to the previously drained beans.

We serve each serving with the egg on top.
