It is a very simple and ideal dish for complete your weekly menu. And I can be much more so if you use canned cooked chickpeas, a product that I always have in the pantry although normally and as I have done for this recipe, pull chickpeas in bulk and a quick cooker.
You know what I like incorporate the paprika to my recipes, both in its sweet version and in its spicy version. If you like it, go ahead! If you prefer other spices, be free to substitute it. A little bit of turmeric or curry can also go perfectly in this recipe for green beans with chickpeas.
The recipe
- 80 g. raw chickpeas (soaked)
- 320 g. green beans
- 2 boiled eggs
- Paprika
- Chopped paprika
- Black pepper
- Sal Island
- Extra virgin olive oil
- In the pressure cooker with plenty of water and salt we cook the chickpeas for 20-25 minutes or until tender. Once cooked, we drain them, reserving the broth for other preparations.
- Afterwards, we clean the green beans by removing the tips and we chop to cook them. Depending on the type of beans and your personal taste, the time will vary. In my case it was 10 minutes. Once cooked we drain them.
- Mix the green beans with the chickpeas and the season with a drizzle of oil of virgin olive, a teaspoon of paprika, a pinch of salt and another of black pepper. Mix well and top with the chopped boiled egg.
- We serve the green beans with chickpeas hot, warm or cold.
