Ingredients
  • 175 g. of butter
  • ½ cup icing sugar
  • 70 g. brown sugar
  • 3 eggs L
  • 200 g. dark chocolate
  • 2 tablespoons of pure cocoa
  • 1 tablespoon of instant coffee
  • 1 tablespoon of hot water
  • 2 teaspoons of vanilla essence
  • 1 teaspoon flake salt
  • 75 g. almond flour

Preparation
  1. In a saucepan we melt the butter to simmer.
  2. Once melted, we add the sugars and we mix. We turn off the heat and let the mixture cool for 10 minutes.
  3. Afterwards, we put the mixture in a bowl and beat. While we beat, we incorporate the eggs one by one. Once the 3 eggs are incorporated, beat at medium speed for 10 more minutes.
  4. Meanwhile, preheat the oven to 180ºC and cover a 23 cm x 23 cm square mold with baking paper.
  5. We also take advantage of melt the chocolate, either in the microwave or over the fire in a bain-marie, and mix the cocoa, coffee, vanilla and hot water in a cup.
  6. Once the chocolate has melted, we add it to the previous cocoa mixture and mix.
  7. Next, we add the mixture to the bowl and we beat at low speed until a smooth dough is achieved.
  8. Finally, we add the flour of almonds to the mass and we stir until it is perfectly combined.
  9. Then, we pour the mixture into the mold and we take to the oven for 20-25 minutes.
  10. We remove from the oven and let it cool completely before cutting into portions and serving with a few flakes of salt.
