Garlic soups or Castilian soup, a traditional soup of use, in which we use stale bread. It is a very comforting and very good soup, a dish that our grandmothers made and that follows the tradition in our homes, due to the simplicity of the soup.
With very few ingredients we can prepare this soup, with a touch of garlic and paprika, it has a great flavor and if we accompany it by putting an egg per person, it is a very complete and very warm dish, it is very good.

Ingredients
- 9-10 slices of bread from the day before
- 3 cloves of garlic
- 50 gr. minced ham
- 2 eggs
- 1 teaspoon of paprika
- A sprinkle of hot paprika
- 1 l. broth or water

Preparation
- We prepare all the ingredients. In a saucepan where we are going to make the soup, we put a little oil, fry the bread slices and reserve.
- In this same casserole with a little more oil we will put the chopped or sliced garlic, over low heat, before they take color we will add the chopped ham, stir.
- We remove the casserole from the heat, so that it does not burn, we will put the sweet paprika and the spicy paprika if we like it, we stir everything well, put the slices of the fried bread, we return the casserole to the fire.
- Cover with the water or broth and cook for about 15 minutes over medium heat, without coming to a strong boil.
- After this time, we taste the salt and leave it to our liking, we will add the eggs, one for each guest, we will raise the heat and leave it until they are set to our liking, or we will see that the white whites are there and they will be about 3-4 minutes .
- And they will be ready !!!
- We will serve in individual casseroles with one egg per person and to eat !!!
