During the coldest days of winter we all look for comforting recipes that warm us up. The sopa de ajo is undoubtedly one of them. Made with simple and inexpensive ingredients, it is part of our gastronomic tradition and culture.
Also known as 'Sopa Castellana', it has old bread to make the broth fat, as well as garlic, chorizo, paprika and egg to give it more flavor. A simple combination which makes this recipe a perfect ally to complete our weekly menu.
Ingredients
- 8 cloves of garlic
- 12 slices of chorizo
- Virgin olive oil
- 1 teaspoon paprika sweet
- 1 good splash of white wine
- 100 g. dry bread
- ¾ liter 850 ml of water
- 1 egg
- Sal Island
Preparation
- We cut the bread into thin slices.
- We peel the garlic and we cut them into not very thin slices.
- We put a drizzle of olive oil in a saucepan and we fry the garlic until golden brown.
- Then, add the chorizo and we cook so that it takes color and releases the fat.
- We add the paprika and stir with a wooden spoon.
- Immediately after we pour the white wine and we reduce for 2 minutes to eliminate the alcohol.
- We add the bread and we stir so that it is impregnated with oil.
- We add the water and the salt and cook for approximately 15-20 minutes.
- Before serving, we beat the egg and we add it. Cook for 2 minutes, slightly stirring the mixture.
