Ingredients
  • Olive oil
  • 1 medium onion, minced
  • ½ large red bell pepper, cut into strips
  • 1 garlic clove, minced
  • 1 teaspoon of paprika
  • 2 cayenne chillies
  • 600-700 g. whole tomatoes, peeled and chopped
  • 3 tablespoons of grated cheese
  • Salt and pepper
  • 3 eggs
  • 1 avocado, sliced
  • Chopped parsley for garnish

Preparation
  1. In a deep frying pan with a drizzle of olive oil poach the onion and the pepper for 5-8 minutes.
  2. Then add the garlic and spices. We stir and cook a couple of minutes more so that all the flavors are integrated.
  3. We incorporate the tomatoes and we let the tomato sauce simmer for 10-15 minutes.
  4. Then we add the cheese, we stir so that it melts and we test. We correct the salt point, if necessary, and sprinkle with freshly ground black pepper.
  5. Once the sauce is to our liking, we smash 3 eggs in the tomato sauce. We put a lid on the pan and let them cook with the heat of the tomato. When they are more or less curdled, season.
  6. Once ready, add the avocado and decorate with parsley. We serve immediately.
