I love avocado, possibly because it offers me an alternative to traditional fruits. I usually include it in salads like these with cherry tomatoes, fresh cheese and dried fruit vinaigrette. A simple and quick proposal to start any meal, don't you think?
This salad is very fresh and light; it is perfect for the hottest days of next summer. I have put a sweet note, incorporating the dried fruit vinaigrette a tablespoon of honey, but you can dress it with a simple vinaigrette. You can also play with different nuts: walnuts, pistachios, hazelnuts, cashews ... or why not, raisins1
- 2 handfuls of lettuce leaves
- 1 handful of lamb's lettuce
- ½ chives
- 12 cherry tomatoes
- 1 Avocado
- 80g. fresh cheese
- 8 walnuts
- 12 pistachios
- 6 tablespoons of extra virgin olive oil
- 3 tablespoons balsamic vinegar
- Freshly ground black pepper
- 1 teaspoon of heather honey
- We create in a source a green base, with lettuce and lamb's lettuce.
- We also add to the salad the Cherry tomatoes, julienne onion, chopped avocado and diced fresh cheese.
- In a frying pan we roast the nuts, paying attention so that they do not burn.
- While in a glass jar add the oil, vinegar, a pinch of black pepper and honey.
- When the nuts are toasted the we add to the dressing. We close the jar and shake it.
- We dress the salad and serve.
