Today I propose a esqueixada, a cod salad of Catalan gastronomy. The esqueixada is a salad made with cod and vegetables. It is fast and its ingredients are simple, it is very good and it is a very complete dish.

The esqueixada provides a great source of protein that comes from cod and with little fat, It is good as a first course or as a starter, for the summer it is ideal since you want to consume it very fresh and a good dressing that will give it a very good flavor. You have to be careful with the cod that it is not too salty or season it with little salt.

Ingredients
  • 300 gr. boneless cod
  • 1 cebolla
  • 1 red pepper
  • 2 green pepper
  • 2 ripe tomatoes
  • 1 garlic (optional)
  • 1 pot of black olives
  • Buy
  • Vinegar
  • Sal Island

Preparation
  1. The first thing will be to desalinate the cod, we will soak it for 48 hours, we will change the water every 12 hours. There is also the option to buy it already desalted at its salt point.
  2. When we have it desalted, we will cut it into finite strips, we reserve.
  3. We prepare the vegetables, wash the red and green peppers, cut into small pieces, peel, cut the onion, we will put it in a source.
  4. We wash and chop the tomatoes, put it in the source, add some black olives, whole or chopped, we also add the cod into finite strips.
  5. We will keep it in the fridge until it's time to serve it.
  6. We prepare the dressing, in a bowl we put a little oil, vinegar, a little salt since the cod is already salty and 1-2 very minced garlic, this is optional, we stir it well and when serving we season it.
  7. Serve it cold !!!
