Preparation
  1. To prepare the garlic and parsley fish croquettes, we will start by putting the fish to cook in a little water and a little salt. If you have fish from a broth, this step will already be. Reserve a little of the fish broth.
  2. Chop the garlic and parsley. Put a frying pan with the butter and the tablespoons of oil, add the garlic, sauté carefully so that they don't burn.
  3. We chop the fish, removing the bones and skins. Before the garlic browns, add the fish, cook for a few minutes so that the fish takes on the flavor of the garlic, add the parsley. Add the flour and let it cook a little so the croquettes don't taste like flour.
  4. We will heat the milk in the microwave.
  5. Add the small glass of broth, stir and mix, when the dough has thickened add the milk little by little and mix. Add a little salt and try to give it the point you like. We must have a creamy dough, which detaches from the pan.
  6. We transfer it to a source, let it warm and put it in the fridge for a minimum of 4 hours or overnight.
  7. We prepare to make the croquettes. In a bowl put the breadcrumbs and in another beat the eggs. We take the dish out of the fridge and with the help of a spoon we take pieces of dough, shape it, pass them first through the egg and then through the breadcrumbs. We can prepare all of them, cook the ones we are going to eat and put the rest in the freezer.
  8. We put a frying pan with plenty of oil over medium heat, when it is hot we will fry the croquettes in batches until they are golden, we remove them and we will put them on a cooking paper so that they release the excess oil.
