Fish croquettes

Fish croquettes, simple and delicious to prepare . These croquettes are of use, they are made of fish, they are very good and I usually prepare them with a piece of fish that I have left or when we make broth and there are good pieces of fish.

Croquettes are very popular, they are ideal for the little ones, who like them a lot and so we can put vegetables, fish….

They are a bit entertaining but it is worth it, you can make more quantity and freeze.

Ingredients
  • 250 gr. fish (can be varied)
  • 500 ml. milk
  • 1 small glass of fish
  • 80 gr. flour
  • 60 gr. butter
  • 2 tablespoons olive oil
  • 2 cloves of garlic
  • Sal Island
  • A handful of chopped parsley
  • 2 eggs
  • Bread crumbs
  • Oil to fry the croquettes

Preparation
  1. To make the fish cakes we will start by cleaning the fish of bones and skins. We can cook it or sauté it in the pan without spending much. If you have fish stock, reserve a little to make the croquettes.
  2. Chop the garlic and parsley. We put a frying pan with the butter and the tablespoons of oil, add the garlic, sauté being careful not to burn the garlic.
  3. Before the garlic is browned a lot, we add the fish, it can be already cooked or if it is very small, we let it cook with the garlic.
  4. Cook for a few minutes so that the fish takes on the garlic flavor, we add the parsley. Add the flour, let it cook for a minute, add the milk little by little and stir, if we have a little broth we add it.
  5. We add a little salt and we taste to give it the point that you like. We should have a creamy dough that comes off the pan.
  6. We transfer it to a source, let it warm and put it in the fridge for a minimum of 4 hours or overnight.
  7. In a bowl we put the breadcrumbs and in another we beat the eggs. We take the source out of the refrigerator and with the help of a spoon we take pieces of dough, we shape it, we pass them first in an egg and then in breadcrumbs. We can prepare all of them, cook the ones that we are going to eat and put the rest to freeze.
  8. We put a frying pan with plenty of oil over medium heat, when it is hot we will fry the croquettes in batches until they are golden, we remove them and we will put them on a cooking paper so that they release the excess oil.
