Endives stuffed with goat cheese and avocado

Are you missing a starter to complete your Kings table? These stuffed endives goat cheese and avocado can be a good option. They're light, easy to prepare, and the filling has a combination of ingredients that is hard to resist. What else do you need?

Cheese goat and avocado roll are the ingredients used as a filler. Both are enough to achieve a very tasty result, but this time and as an aperitif for a special occasion we have also added caramelized walnuts and raspberries to add color.

The only downside to this dish is that you won't be able to prepare it too far in advance to prevent the avocado from rusting. The good thing is that it won't take you more than 10 minutes to do it if you have the rest of the ingredients prepared. Do you dare to prepare this party starter?

These goat cheese and avocado stuffed endives are a perfect option to serve as a starter when you have something to celebrate.

Ingredients
  • 16 large endive leaves
  • 1 Avocado
  • ½ goat cheese roll
  • A pinch of salt
  • A pinch of freshly ground black pepper
  • 16 caramelised walnuts *
  • 16 raspberries or other red fruit
  • Extra virgin olive oil
For the caramelized walnuts
  • 50g. walnuts, peeled into halves
  • 32g. of honey
  • 7g. of butter.

Preparation
  1. We prepare the caramelised walnuts in advance. Put the honey and butter in a saucepan, heat over medium heat and stir from time to time until the honey and butter are one.
  2. Then we add the walnuts, making sure that they are well covered with the mixture on all sides. We cook by stirring them from time to time while the water evaporates and mixes begin to caramelize.
  3. When there is little caramel left, we take them out and we pour on paper of oven well separated so that they cool.
  4. Once the nuts are cold, we prepare the stuffed endives. For it we mix in a bowl the crumbled or diced cheese with the diced avocado, salt and pepper.
  5. Then we stuff the endives With the mixture, we drizzle a little olive oil and decorate with a few pieces of walnuts and one or half raspberry.
  6. We serve the endives stuffed with goat cheese and avocado.
