Elvers with garlic prawns, a delicious dish that we can prepare as a starter, tapas or aperitif.

Elvers have become a special dish for these holidays. They are prepared accompanying dishes, in canapes or tapas, it is a very useful dish for lunch or dinner. This fish has a high cost for which the substitute is used that is similar and more affordable to the pocket.

This time I have prepared a plate of baby eels with garlic prawns, a typical Basque dish. With a spicy touch that makes this dish a delicacy. A simple and quick dish to prepare. We can prepare it in advance and reserve until it is time to do it, we will only have to heat and serve. If we let it rest, it will get more flavor from the garlic and cayenne.

Ingredients
  • 400 gr. of elvers
  • 200 gr. peeled prawns
  • 2-3 garlic
  • 1-2 cayenne
  • Parsley
  • Sal Island
  • Olive oil

Preparation
  1. To prepare the plate of elvers with garlic prawns, we will start by peeling and cutting the garlic into thin slices.
  2. If the peeled prawns are frozen, we let them defrost in a large colander so that the water will drain well. We dry them a little with a kitchen paper.
  3. We put a frying pan with a good jet of olive oil that covers the bottom of the pan over medium heat, we add the sliced ​​garlic and the cayenne pepper, we leave the garlic for one or two minutes without turning color, just give the oil flavor and add the peeled prawns. We raised the fire.
  4. Let the prawns cook, when they are, add the elvers, sauté everything together for a couple of minutes, add a little salt and sprinkle a little parsley if you like. We turn off.
  5. We will serve them very hot. And accompanied by toasted bread.
  6. And ready to eat!!!
