Eggplant and York ham cake

We are going to prepare an aubergine cake and york ham, ideal to eat as a starter or as a single dish. We can prepare it with various ingredients that we like, you can put meat, fish or just vegetables. It is a very complete and good dish, for a dinner it is ideal.

Surely the little ones will like it, since it is difficult for them to eat vegetables, but with the cheese and the ham it is a great cake.

You can also put a bechamel sauce on top before putting in the oven.

Ingredients
  • 2 eggplants
  • 1 can of tomato sauce
  • A few slices of York ham
  • Fresh mozzarella cheese
  • Flour (XNUMXg)

Preparation
  1. First, we prepare the aubergines, wash them, cut them into slices or strips, put them in a bowl, add salt over the aubergines and let them rest for 30-40 minutes.
  2. After this time we wash them to remove the bitter water.
  3. We put a frying pan on the fire with a little oil, in a plate we put flour and we will pass the slices of aubergines through flour and fry in the pan.
  4. As we remove the aubergines from the pan, we will place them on kitchen paper to absorb the oil.
  5. Take a dish suitable for the oven, put a layer of aubergines as a base, a layer of ham, a few pieces of mozzarella cheese and put tomato sauce on top, sprinkle with oregano. We put another layer of eggplant on top and repeat the same, layer of ham, cheese and tomato.
  6. We will repeat as many layers as we want, the last one will be aubergine, a little tomato with a little oregano and grated mozzarella cheese.
  7. We put it in the oven at 180ºC with fire up and down until it is golden, about 10-15 minutes.
  8. We take out and it will be ready to eat !!!
