Ingredients
  • 3 eggplants
  • Sliced York Ham
  • Sliced cheese
  • 3 eggs
  • Fried tomato sauce
  • 200 ml of milk
  • Grated cheese
  • Olive oil
  • Black pepper
  • Sal Island

Preparation
  1. We will begin washing the aubergines. We cut the ends and cut them into sheets approximately half a centimeter thick. When we have them all, we add them to a bowl with water (you have to cover them all), add salt and stir a little. We let them soak for about 10-15 minutes so that they are not so bitter.
  2. The next step is to remove the slices of aubergines and dry them with a dry cloth to remove excess water.
  3. We preheat the oven to 180 ºC.
  4. Once the aubergines are dried, we will grill them with a little olive oil and salt. And once done it will only be necessary to place sheet by sheet each of the ingredients previously cited.
  5. In an oven-safe glass tray we will place a fried tomato base, and then we will add a layer of aubergines. On top of this layer we will add another bit of fried tomato, and later the slices of ham and cheese. And so we will be placing until we finish with all the aubergine sheets.
  6. Then with the 200 ml of milk we add the 3 eggs, salt and pepper. We stir well and add the mixture to our tray of aubergines. The last step will be to add the grated cheese and put in the oven (preheated) for about 35-40 minutes.
  7. And ready to eat!

Notes
Instead of using aubergines we can also use zucchini.
